Garlic Varieties

There are 10 known varieties of garlic:

5 of true hardneck garlic, the strongest flowering garlic that do well anywhere in Canada: Rocamobles, Porcelain, Purple Stripe, Marbeleb Purple Stripe, and Glazed Purple Stripe. 3 weakly bolting hardnecks: Asiatic, Creole and Turban. 2 Softneck varieties: Artichoke and Silverskin. Softnecks and weakly bolting hardnecks recommended for the milder climate zones in Canada.

Standard Purple Stripe

Purple Stripes have slender, crescent cloves and purple flowers. They are noted for bringing culinary excellence to the table. The purple striping on the bulbs can be subtle, or deeply entrancing. The Purple Stripe is the most ancient of horticultural groups within the garlic family. Taste of Purple Stripes is strong, complex and richly garlicky, without being overly sulfurous. This group is best for roasting producing a sweet and exciting sensation on the palate. Harvest time for South Ontario – last two weeks of July.

Chesnok Red - Origin: Shvelisi, Republic of Georgia. It is slower to emerge in spring and it matures a little later in the season as well. Highly productive. This is one of the best cooking garlics. Chesnok Red regularly wins acclaim and awards as one of the best tasting baking garlics. It is very flavorful, and holds its shape and retains flavor without heat to dishes. It has a distinct smell, more like a roasting sweet onion than a garlic. Cloves are a deep purple and simply gorgeous! Cloves are much skinnier and lighter in weight than most garlic. Useful as good mid-winter garlic, it peels easier after 4-6 months of storage. Average 8-10 sharply pointed pink cloves per bulb.

Persian Star.jpg

Persian Star - Origin: Samarkand, Uzbekistan. This one has some vivid clove colours. The outer bulb wapper is sometimes smooth white but the inner wrappers are purple streaked. When the wrappers are all peeled away the clove covers with their distinctive long sharp points resemble an eight point star, hence their name. Very pleasant flavor with a mild spicy zing. Persian Star generally harvests in the middle of the season and stores for about 5 to 6 months. Average 7 cloves per bulb

Red Russian - Beautiful purple bulb wrappers. Clove wrappers are brown and purple. Large bulbs are easy to peel and store very well. 6-8 cloves per bulb. If you want to impress your friends and family by the size and beauty of your homegrown garlic this is the one.

Duganski - Striped violet wrappers house lovely, honey-toned shades of brown and purple on clove skins. Amazing flavor matches this garlic’s showy appearance. Reasonably hot, with a basic allium flavour that mellows to a rich pleasant aftertaste. Produces large bulbs that are late to harvest. Stores well. 7-10 cloves per bulb.

Siberian - Light pink colored skin with consistent large bulbs and cloves. Very hardy, excellent performer in cold and hot climates. If you are concerned about illness, this is the garlic for you. Very high in allicin, the compound that is responsible for garlic’s antibiotic effect and for its ability to control cholesterol and high blood pressure. Delicate and mild garlic flavor that compliments other flavors without overwhelming them. Light pink coloured skin. Cloves are large. This great tasting bulb caramelizes when roasted. Siberian is perfect in light stir-fries, dips, sauces or soups where only a hint of creamy garlic flavor is desired. Average about 7 cloves per bulb.

Metechi.jpg

Metechi - One of the most fabulous garlics in the world. These are huge garlic bulbs with a flavor that is even bigger. They are close to the size of the largest Artichokes. Metechi’s bulb wrappers are thick, luxuriant and parchment- like and the outer ones are very, very white. As you peel away the outer wrappers more and more purple striping shows up and they become almost solid purple by the time you get down to the cloves. The clove covers are dark brown with purple streaks and long sharp pointed tips. They have five to seven monstrously large cloves. They have a pleasant lingering aftertaste. These great fireballs store much better, firmer and longer than the standard group and grow much better for us as well. Really hot garlic with warm pleasing and garlicky aftertaste, but not unpleasant.

Marbled Purple Stripe

Marbled Purple Stripes are cold hardy and require exposure to cold temperatures in order to thrive and develop large bulbs. They are well suited for growing in Canada and Tend to preform best in colder climates. They are generally harvested in end of July and beginning of August and are somewhat more tolerant of difficult conditions such as wet soils. Bulbs tend to have a symmetrical clove structure and wrapped in a more spotted pattern rather than striped. They produce 4 to 7 plump cloves per bulb and are generally easy to peel. They are hot to very hot when raw and add great overall flavor to recipes. Has a storage life of 5 to 8 months. Their good overall package has made them a popular favorite with consumers.

Purple Glazer.jpg

Purple Glazer - Tall plants with dark green very elongated leaves with a definite blue cast to them in the sunlight. They have rich burgundy stripes on smooth white skin which makes this one of the most attractive garlics. It does catch people’s eye at market. Purple Glazer has a strong lasting flavor, but not hot and no aftertaste. Large cloves are easy to peel. This hot garlic is known as one of the best bakers, with a fine texture not unlike cooked carrots. It needs very cold winters to produces consistent high yields and shows resistance to rust. 9 – 12 cloves per bulb. Stores up to 5 months.

Oregon - Hotter than most Purple Stripes, Oregon goes a long way and has exceptional flavour with undertones of single malt scotch. Beautiful cloves that are similar in size to Marbled Purple Stripe, but more numerous.

Rocambole (Hardneck)

They have reddish brown skins covering the individual cloves. The bulb wrappers often have red, pink or purple stripes when they are first harvested. They have charming, pumpkin-shaped bulbs and beautiful scapes with huge bulbils. Characterful curling scapes are used as an early summer delicacy. Their loose skins make them easy to peel. Their rich flavor makes them some of the best garlic to taste raw. They are divine in salads, or on bread with cheese. The cloves are sweet, rounder just waiting to pop out of their wrappers. Store 4 -5 months, it is best to enjoy them in season. Harvest time July 10 – July 30. Rocambole garlics are well known for their wonderful, robust, well rounded, true-garlic flavor. But they do not keep as well as tightly wrapped cloves. Bulbs can be large and generally have 8 to 15 cloves. Rocamboles grow best in well-drained soil. Given the right conditions they will produce superb bulbs.

Puslinch - From Puslinch, Ontario. Also known as Ontario Giant, this is rocambole garlic from the Great Lakes region selected for its excellent disease resistance in heavier soils. It has an incredible depth of flavor making it an excellent choice for roasted garlic, pickles and everyday use. It peels easily so it is good choice for fast meals. The largest bulbs last 3-4 months while the smaller ones last 8-9 months. 7-12 cloves per bulb.

Russian Red.JPG

Russian Red (not to be confused with "Red Russian") - It has a strong garlic flavor and has a warm sweet aftertaste and pleasant bitterness. Heat is long lasting like a hot pepper. It is a heirloom brought to British Columbia by Doukhobor immigrants from Russia in early 1900’s. This variety has the ability to withstand soggy winter soils much better than others. Averages about 6-8 cloves per bulb.

French Red - Medium-sized, white-skinned bulbs with an average of 8 large cloves in them. The cloves have pale-tan coloured skin that is purple at the bottom. One of the best tasting Rocamboles. They have full flavour without being sharp. Buttery and smooth. Early to mi-season harvest.

Spanish Roja - Heirloom garlic that was reported to have been brought into Northwest Oregon before 1900, it is often called Greek garlic. It is a gourmet best-selling garlic for home gardens! Excellent rich flavor is best described as being a “true” garlic flavour. Bulbs are usually over 2 ½ inches in diameter. Each bulb has about 8-12 cloves. Outer wrapper varies in color, from a rich cream to deep purple stripes. Cloves are large with a brownish red color and are easy to peel. Store 4-6 months.

Spicy Korean Red - A vigorous grower resulting in good-sized bulbs. It has a lot of flavor, being quite hot and spicy. It has 6-8 big cloves per bulb. Skins peel with exceptional ease and are light brown colour. It has plenty of flavor, being quite hot and spicy. Great taste is their claim to fame, not long storage.

Sault Spring Select - Great strength and flavour. It is an easy garlic to grow, performing well under most circumstances. Stores 5-6 months. 8-12 cloves per bulb.

German Red Rocambole.JPG

German Red Rocambole - An old world variety with a full flavored velvety taste. This golden garlic adds a deep aromatic flavor to stews, winter vegetables, roasts and wild game. German Red has a complex and unique flavor that stands out in a dish without overwhelming other flavors. Try roasting this garlic and you will not be disappointed. The bulbs can grow very large if given optimal growing conditions. German Red loves well drained soil enriched with organic matter and manure; the more you add the bigger your yield. Clove wrappers have a tendency to split. The bulbs contain 10-12 golden brown cloves.

Ukrainian - Delicious old world flavour and reliable in the field. Ukrainian can grow into big, robust, hardy, hardneck garlic. Ukraine is crisp and crunchy with a light taste very reminiscent of shallots with a little sharpness of four to five on a scale of ten. A warm rich aftertaste that lingeres a few minutes. This garlic is excellent for salads and pesto's among other raw uses where you might want a light but snappy taste.

Porcelain (Hardneck)

The most magnificent of all Garlic Varieties. Porcelain strains one of the easiest varieties to grow and thrive under a wide variety of growing conditions. Tall, blue-green plants with very tall flower stalks. Porcelains have big and beautiful looking bulbs with clean, very white wrappers that don’t split open too quickly. They have 4 to 7 large cloves, so they yield fewer plants per pound than other varieties. The cloves are easy to peel.A strong flavored garlic, the clove skins are rosy-brown, or pink and yellow in colour. Bulbil capsules have numerous, tiny bulbils. As a genetic group, Porcelain strains are very similar to one another. The big cloves contain an excellent dose of allicin (medicinal component of raw garlic). Highly recommended for growing anywhere in Canada as they perform very well in cold climate. In good conditions, Porcelains store quite well. Usually harvested last two weeks of July.

Armenian - Origin-Karabagh-Republic of Armenia. Thick bulb wrappers cover large cloves. Lovely, bright white bulbs with nice plump cloves have an earthy, intense flavor when enjoyed raw and overall rate a medium on the heat scale. A good choice for beginning growers as the plants are especially hardy and vigorous. A very popular garlic cultivar. 4-7 cloves per bulb.

Georgian Fire - Origin: Republic of Georgia. The clove covers are a light brown streaked with purple. From a grower’s perspective, it is a large and healthy garlic to grow and appears to be relatively resistant to most of the diseases that can affect garlic. Late harvest. Rich robust flavor that is strong with a pleasant hotness – popular for salsa! 4 to 6 large cloves per bulb.

Georgian Crystal - Origin: Republic of Georgia. Georgian Crystal’s huge beautiful cloves and bulbs can weigh up to one-third of a pound and have super-sized cloves. Clean fresh tasting garlic with a vastly superior flavor. The light flavors combines well with root vegetables, cabbage, chicken, seafood and fish. The mellow raw flavor is great in uncooked dips and salsa. This garlic has a very pure flavor with no earthiness. Like most Porcelain garlics, this variety has great staying power in a dish. This sophisticated garlic with its mix of great taste, pure beauty and super big cloves is ideal for restaurants and chefs.

Ivan - One of the most popular from porcelain  variety of garlic. Our favorite. It has very large bulbs which very easy to separate and peel! It is a very hot-flavored garlic if eaten raw. When this garlic get cooked it has a mild garlic flavor with a little bit of sweetness. Average 4 to 7 large, easy to peel cloves with the classic garlic flavor that excels in any recipe. Ivan is a good keeper and stores into spring in a cool dry area.

Music - Origin-Italy. Best yielding strain, preferred by commercial growers in Ontario. Cloves are large and easy to separate and peel. Shiny-white with a pink-tinged clove skin. Disease resistant. Music is a flavorful garlic of medium pungency and sweetness when cooked and very hot when eaten raw. Essential for seasoning. Stores well 6-7 month up to the year. Average 4-7 large cloves per bulb.

Polish - It is large, beautiful and well-formed porcelain garlic. Its flavor is rich, deep and musky and has a searing punginess that sticks around for a long time. From a grower’s perspective, it is a tall dark green plant and is a very good survivor, usually grows healthy and appear to be somewhat resistant to many of the diseases tha can affect garlic. It obviously came from Poland and likes cold weather and can get quite large in good growing conditions. Stores into spring.

Romanian Red - Origin: Romania. Romanian Red is large and beautiful garlic with rich robust flavor that is strong and has an aftertaste that lingers. The clove covers are a light brown streaked with purple. Romanian Red has been tested and generates more allicin by far than any of the other ones tested. If you want hot garlic, this one is it and it stores into the following spring! From a grower’s perspective, it is large and healthy garlic to grow and appears to be relatively resistant to most of the diseases that can affect garlic. It does not like competition from weeds. Averages 4 to 5 cloves per bulb.

Legacy - Origin: A beautiful heirloom that came to Canada in 19th century with German immigrants. Flavour is classic, rich and particularly spicy when fresh, but mellowing with storage. Legacy thrives in cold climates and very good for storage. Streaked and lined cloves. 8-9 good size cloves per bulb.

Yugoslavian - It has a strong garlic aroma, initially hot and spicy garlic, but not overwhelming and then mellowing to a warm pleasant, sweet aftertaste. It is a favorite with serious garlic eaters! Yugoslavian garlic retains its flavor when used in cooking and stores well if it cured properly. Copper veined and purple blotched bulbs. Deep green, large and vigorous plant. Cloves are dark brown and doubles are common. It does not like competition from weeds. Average 9 to 14 cloves per bulb.

3 Weakly Bolting Hardneck Varieties (Asiatic, Creole and Turban)

A weakly bolting hardneck is garlic that may have a stalk that is less woody than the standard hardnecks or may not have a stalk, depending on conditions. Asiatics have a long beak on the umbel of the bulbil capsule and a few large bulbils. Turban garlics have many small bulbils. Creoles are naturally smaller and prefer warm climates.

Asiatic

The scapes have very long, peculiar beaks that give the Asiatic plant a unique aesthetic appeal. The umbel typically contains a small number of large bulbils, on a short stalk that does not coil. The bulb shape is tapered, with fine purple stripes on white wrappers, and plump, pointy cloves. The plants are yellowish-green and are early to harvest. Harvest Asiatics and Turbans somewhat early, as the bulb wrappers are susceptible to splitting open if left in the ground too long. They make attractive bundles with the scapes left on. Asiatics are small and bright. Be warned by their soft reddish stripes, the teardrop bulbs are full of fire. The plants are pale green, and slightly yellow, with short stalks, and very interesting scapes. 4 to 8 large cloves per bulb. Typically can be stored 5 to 7 months. Harvest 1 to 15 July.

Korean Mountain Asiatic.JPG

Korean Mountain - Beautiful purplish heads, with very large cloves. It is a vigorous, broadleaf variety with a scape. Full flavor with an extra sharp initial burst of heat; the tingle fades quickly leaving you with a nice mild aftertaste. Long storing garlic. Averages 5 to 7 cloves per bulb.

Uzbekistan.JPG

Uzbekistan - Mid-season. Originated from Washington State, where it was introduced by German immigrants. The shiny, bright purple wrappers open to reveal equally colorful, big cloves. But we believe the original stock came from the central Asian republic of the same name. It is a glazed purple stripe variety with very colourful bulbs and large cloves

Creole

Creoles are a specialty type of garlic with excellent storage properties and a subtle, exquisite beauty that more than compensates for the modest size of the bulbs. The cloves stay firm well into the next garlic harvest. Creoles hide most of their colour in the clove wrappers, under glamour of satiny white skin. The colour of the bulb resides almost entirely in the clove skins, ranging from deep purples and reds, to a soft pink. The scapes emerge and mature late, are very slender during development and droop down elegantly. Creoles also have a tendency to grow side cloves outside of the main bulb. Creoles store amazingly well, and are known for having complex and pleasing flavours. Can be stored 6 to 8 months. Harvest in Southern Ontario July 10 to July 20.

Rose de Lautrec - The famous garlic of France. In France the white bulb wrappers are traditionally peeled back to the last layer to reveal the soft pink colour of the clove skins. The pink-skin cloves are crisp and juicy but somewhat less sticky than everyday white-skin garlic and they keep well. Apart from its undeniable beauty, Rose de Lautrec is also distinguished for its aromatic and extremely sharp flavor. It has a savory sweet mild taste with an influence of Dijon mustard, it makes an outstanding choice for pesto, and the best possible choice for garlic butter and roasted caramelized garlic. All but one layer of skin is removed before the garlic is shipped, so peeling is quick. Harvest mid-late season. Averages 10 plump cloves per bulb. Stores 7 to 8 months.

Ajo Rojo Creole.JPG

Ajo Rojo - Heirloom garlic from Spain Ajo Rojo is a distinctive Creole garlic with large bulbs and vibrant re/burgundy clove wrappers. Ajo Rojo garlic is one of the hotter Creole garlics as far as taste when eaten raw but develops a much milder, creamier flavor when baked. Stores well.

There are two softneck varieties: Artichoke, and Silver Skin

Artishok (Softneck)

Artichokes are among the most productive and least problematic. They are ready for harvest early, easily develop large bulbs, and adapt to a wide range of growing conditions. Bulb colour is whitish to purple blush. Artichoke cultivars have multiple clove layers. The cloves are squares-round, and the flavors are timid and unsubtle, according to the garlic world. In northern climes, they straddle the hardneck/softneck line uneasily, being mostly softneck, but with some plants producing “neck-bulbils” (a partially grown scape that does not emerge from the top of the plant). Harvest time for artichokes July 10 – July 20. As a softneck, some of the plants may also fall over, like onions do, just before you’ll want to harvest them – this is another indicator of harvest time. 12 to 20 cloves per bulb and one pound of bulbs will supply about 80 cloves. Bulbs store for 6-9 months.

Sicilian Gold - Originated in Sicily. Classic Italian taste. An excellent producer of large flattened white to beige large bulbs with outer skins mottle purple. It does well in any soil. Robust but not too hot. Mild, with a long-lasting aftertaste. Perfect for pasta sauces and salad dressing. 8-11 cloves per bulb.

Italian - Artichoke garlic with tight, light colored wrappers surrounding fat, round outer cloves. Very productive. Mild at harvest then hotter as it has time to cure. Harvest when first leaf shows signs of browning, allow growing while curing. Strong rich garlic flavor. Storage up to 6 months. Can be braided. 8 to 12 cloves per bulb, early season harvest.

Inchelium Red - Inchelium Red is a large and beautiful artichoke garlic with delightfully robust flavor but not so strong as to be overpowering. It is among our bestselling artichoke garlics most years. Inchelium Red has medium rich garlickness and medium pungency, or hotness when eaten raw. From a grower’s perspective, it is a large and healthy garlic to grow and appears to be relatively resistant to most of the diseases that can affect garlic. Inchelium Red usually has anywhere from 10 to 12 very large cloves and even the interior cloves are generally of good size. The outer bulb wrappers are thick and protect the bulb well so it is good storing garlic but still peels easily. For those who want to grow their own garlic it has enough cloves that it doesn’t take but a year or two to grow all you can eat. It harvests in mid-season (late for an artichoke) and takes a little longer than average to cure due to its large size. Bulbs are usually over 2 ½ inches in diameter and will weigh several ounces each.

Silverskin

Silverskins are the type most often found on a supermarket shelves due to their very long storage life. Sleep in pearly, satin bulb wrappers, resting peaceful for as long as 1 year before they go bad. The bulbs are teardrops, and the cloves are slivers of soft salmon-rose colour. 8 to 40 cloves per bulb and one pound of bulbs will supply about 90 cloves. Harvest August 1 – August 25. In this package, you will receive 3 different types of garlic. The 3 different varieties of garlic will have about 4-6 bulbs each for a total of about 16 bulbs and each variety will be labeled with descriptions, so you can experiment with different types of garlic. This will yield enough garlic for a family for a year or 2 bulbs of garlic a week. We will choose garlic that have short to long storability, so you can have garlic until spring in your pantry!

Let us choose the best garlic for you! In this package, we will choose 4 different garlic varieties that are easy to grow and will do well in your geographic area. Of the 4 different varieties will have about 4-6 bulbs each for a total of about 20 bulbs and each variety. This will yield around 150+ bulbs which is usually enough garlic for a family for a year with the ability to replant some for next year… if you don’t eat them all! This Garlic Heritage Collection contains unusual and delicious varieties that are guaranteed to add that special touch to your meals these are full flavored heirloom garlic with a strong, garlicky flavor when raw and a wonderful classic garlic flavor when cooked. These are great all-purpose garlics for all cooking and eating purposes as well as medicinal purposes. These bulbs are usually slightly less than 2”, but still have large cloves and are easy to peel in the kitchen, The cloves are usually the size that fits into a garlic press. These will store until early spring in a cool dry area. Depending on size of the bulbs, there will be 24-26 bulbs. Remember, eat the larger bulbs first as the smaller bulbs will store longer.
